Kevin and Holly Baumann have recently moved to Waterford from Milwaukee with their two children, Madelyn and Evelyn, with the desire to settle in Holly’s hometown and live close to family. They always had a plan to hopefully open a restaurant in Waterford and to their surprise, the opportunity became available shortly after moving here.

 

Holly attended the culinary arts program at Milwaukee Area Technical College and began working at Country Rose Bakery as a Baker/Line Cook in 2004. In 2005 she began working at Bartolotta’s Lake Park Bistro and remained there until she graduated the culinary arts program. From there she remained in the industry working at various places in the greater Milwaukee area and also worked a year at a fine dining restaurant in Williamsburg VA called The Fat Canary. She has finally settled at Potawatomi Hotel and Casino as the Pastry Sous Chef. Kevin began his career at Vivo Urban Grill in 2004 when he was 24 years old. He found his passion in the restaurant industry and has built a career in the Milwaukee hospitality scene ever since including 7 and a half years at Iron Horse Hotel working his way up to Banquet Chef.

 

Kevin and Holly’s vision for Café 213 is to provide classic American cuisine alongside a variety of beverages including coffee drinks, beer, and wine. They have revamped the atmosphere to include barnwood accents from the family farm and a new logo that incorporates the historical address numbers from the building. Kevin will have a smoker outside and will be cooking up some smoked meats and breakfast potatoes. Holly will bring her pastry skills to the table with scratch made pastries including the original Café 213 lemon bars. The Café will be open Tuesday-Sunday 7am-3pm. They will also have occasional special dinner evenings. When the patio opens in spring, they plan to stay open until 6pm on Thursdays and Fridays for a happy hour.

We are thrilled to fulfill a lifelong goal to open our own little slice of heaven less than a mile from our home. While born and raised in Waterford, my husband and I spent the last fifteen years working in some of the best-known restaurants and bakeries in Milwaukee. We are excited to share our passion for food with our daughters and the Waterford community.
